This Japanese chef's knife has a comfortable 5 1/2" handle that makes it agile and easy to use. It is made of a TPE/PP blend that provides a sure, secure grip. The Japanese chef's knife features a proprietary composite blade technology that uses a VG10 san mai cutting core. It has one layer of stainless steel on each side to create the edge and give stain resistance. This Japanese chef's knife is hand-sharpened to 16° (32° comprehensive).
